Potato Scones
Ingredients
500g Mashed boiled potatoes
300g Self raising flour
Salt
Black pepper
Method
1) Set to oven to 200oc
2) Let the cooked mashed potato cool down then in to a large bowl add in the flour sifted a little at a time add salt pepper to taste, you may need a little more or less flour depending on the moisture in your potatoes.
3) Using a sturdy spoon or just get in there with your hands start to mix through the flour until the mixture becomes like a dough and not so sticky it is hard to roll.
4) Put flour on the work surface and roll out the dough to about ½ centemeter thick.
5) Cut out shapes and place on to a greased and floured baking tray spacing evenly.
6) Put the tray in to the oven for 15 minutes until the scones become light brown.
7) Once ready take out of the oven cover with a cloth to keep the moisture in until cool to touch.
8) These are now ready to be wrapped in lenghts of clingfilm and put in to the freezer until needed, once defrosted fry lightly in a little oil.
