Special fried rice

 

Ingredients

 

200g long grain rice

1 large egg

1 small onion (chopped)

mixed herbs

1 tbl sp curry powder

2 tbl sp soy sauce

50g mixed veg (small dice)

1 tsp corriander seed (ground down)

1 tsp cumin seeds

Salt and black pepper (pinch)

1 stock cube

 

Method

 

1) Rinse out the rice then add a tsp of olive oil to the rice in a pan.

 

2) Add two pints of boiling water to the rice, cover and boil for 7 minutes then drain rice into a collendar.

 

3) In to a frying pan add the chopped onion, mixed veg this is the time to add any left overs if desired.

 

4) Once the onion is lightly browned add in the curry powder, stock cube crumbled, herbs, corriander, cumin, soy, salt and black pepper and mix well.

 

5) Add the drained rice in to the frying pan then add the whisked egg and mix well through to break the egg up.

 

6) Cover and fry on a low heat for around 10 minutes stiring occationally.

 

Serve hot 'delicious'
