SWEET AND SOUR SAUCE

 

INGREDIENTS

 

 

 25 G OLIVE OIL

 

250 G CHOPPED ONION

 

200 G SMALL DICED CARROT

 

200 G CHOPPED TIN TOMATO

 

1300 G PINEAPPLE JUICE

 

300 G CHOPPED PINEAPPLE

 

200G TOMATO PUREE

 

30 G WHITE WINE VINEGAR

 

580 G COLD WATER

 

2 G DRY GINGER POWDER

 

120 G CASTOR SUGAR

 

10 G CORN FLOUR

 

 

METHOD

 

Gently heat the oil in a large pan and fry off the onions and carrots until the onion is soft.

 

Add in the rest of the ingredients except the corn flour and bring to the boil cover and simmer for 30 minutes.

 

Mix a little water with the corn flour and add to the sauce to thicken then cook for a further 10 minutes.
