5OOG EATING APPLES (PEELED AND CHOPPED)
450G ONIONS SLICED
50G FRESH ROOT GINGER FINELY CHOPPED
1 TSP BLACK PEPPERCORNS
500G GRANULATED SUGAR
250 ML CIDER VINEGAR
Place all ingredients in to a large heavy based pan then heat gently stirring constantly until the sugar dissolves, bring to the boil then simmer for 50 minutes stirring regularly until the onions and apples become soft and the mixture is of a thick consistency and no watery juice remains.
Pour the chutney mixture in to sterilised jars and seal with the lid and store in a cool dark place.
Your chutney should keep up to 6 months, once opened keep in the fridge and use within a week.
