Nut Roast

Ingredients

250g onion

12g olive oil

300g mixed nuts

400g breadcrumbs

320g vegetable stock

8g marmite

1g mixed herbs

1g salt/black pepper

3g browning

Serves 8

 

Method

 

  1. Make breadcrumbs from slices of bread in a food processor keeping some breadcrumbs separate to use as a topping.
  2. Break down mixed nuts also in food processor.
  3. Fry the onions in olive oil before adding to a large mixing bowl.
  4. Add the rest of the ingredients to the bowl and mix thoroughly.
  5. Divide the mix into 300g tins and top with breadcrumbs.
